Ingredients

  • 1 nonstick cooking spray
  • 1 package (17.3 oz) frozen puff pastry thawed
  • 8 oz Brie cheese cut into 24 small cubes
  • 0.5 cup whole-berry cranberry sauce
  • 0.25 cup pecans chopped
  • 1 tsp fresh rosemary finely chopped

Equipment

  • 1 24-cup mini muffin pan

Method

  1. Heat the oven to 375°F and lightly coat a 24-cup mini muffin pan with nonstick cooking spray.
  2. Cut each puff pastry sheet into 12 pieces and press one piece into each muffin cup, leaving the corners pointing up.
  3. Place one Brie cube in each pastry cup.
  4. Top each with 1 teaspoon cranberry sauce.
  5. Evenly divide the pecans and rosemary among the bites.
  6. Bake for 12 to 15 minutes, until the pastry is puffed and golden and the Brie is melted.
  7. Cool in the pan for 5 minutes before carefully removing and serving.

Notes

For the flakiest pastry, keep the thawed puff pastry cool while assembling. Store leftovers in the refrigerator for up to 3 days; freezing is not recommended for the best pastry texture. For a nut-free option, omit the pecans.
