Method
Prep and mix the batter
- Preheat oven to 350°F and grease a loaf pan.
- Whisk all-purpose flour and baking powder together.
- Cream unsalted butter, softened and granulated sugar until fluffy, then beat in large eggs, milk, and vanilla extract.
- Fold the flour mixture into the wet mixture until just combined.
Make the apple layer
- Toss apples, peeled and diced with brown sugar and cinnamon for apple layer.
Assemble and bake
- Layer batter and apple mixture alternately in the pan, swirling gently to create streaks of apple throughout.
- Bake 55-60 minutes until a toothpick comes out clean.
Glaze and serve
- Whisk powdered sugar with milk (2-3 tbsp) and drizzle over the cooled loaf.
Notes
Dice apples uniformly for even distribution. For a thicker finish, double the glaze and let it set for 10-15 minutes before slicing. Store covered in the refrigerator up to 4 days; freeze slices for up to 2 months and thaw overnight in the fridge. For a lighter option, use low-fat milk (and reduce butter slightly if desired) while keeping the bake time the same.
