Ingredients

Make the pudding
  • 2 package (3.4 oz) instant vanilla pudding mix
  • 3 cups whole milk cold
  • 1 can (14 oz) sweetened condensed milk
  • 1 tsp vanilla extract
  • 0.125 tsp salt
  • 2 cups heavy cream
For the layers
  • 2 package (8.8 oz) Biscoff cookies
  • 5 bananas medium, sliced
  • 1 cup caramel sauce divided

Equipment

  • 1 9x13-inch dish

Method

Make the pudding
  1. In a large bowl, whisk the pudding mix and cold whole milk for 2 minutes.
  2. Whisk in the sweetened condensed milk, vanilla extract, and salt until smooth.
  3. Let the mixture stand for 5 minutes to thicken.
  4. In a separate bowl, whip the heavy cream to medium-stiff peaks.
  5. Gently fold the whipped cream into the pudding mixture until no streaks remain.
Assemble and chill
  1. Arrange enough Biscoff cookies to cover the bottom of a 9x13-inch dish in a single layer, breaking cookies as needed.
  2. Spread half the pudding over the cookies.
  3. Arrange the banana slices over the pudding.
  4. Drizzle with 1/2 cup caramel sauce.
  5. Add a second layer of cookies.
  6. Spread the remaining pudding on top.
  7. Drizzle the remaining 1/2 cup caramel sauce over the pudding.
  8. Crush any remaining cookies over the top.
  9. Cover and refrigerate for at least 6 hours before serving, so the cookies soften.

Notes

For neat layers, spread the pudding gently so the cookies and banana slices stay in place. Store covered in the refrigerator for up to 3 days; freezing is not recommended because the bananas and pudding can become watery after thawing.
