Make the salad
- Combine black beans, diced mango, bell pepper, red onion, and cilantro in a large bowl. Toss just until evenly mixed so the fruit doesn’t get crushed.
- Whisk lime juice, olive oil, cumin, and salt together for the dressing. Keep whisking until the seasoning dissolves and the dressing looks glossy.
- Pour dressing over the salad and toss well to combine. Continue tossing for 30 seconds to coat everything thoroughly.
Toast pepitas and finish
- Spread toasted pepitas on a sheet pan in an even layer. Toast at 350°F for 3-5 minutes until fragrant and lightly golden.
- Chill 15 minutes for best flavor, or serve immediately. Cover the bowl to keep the mango bright and the beans from drying out.
- Top with toasted pepitas just before serving. Sprinkle evenly and add right at the end for maximum crunch.
Notes
Pro tip: dice mango and beans into similar bite-size pieces so every scoop has both fruit and legumes. Store covered in the fridge for up to 3 days; add pepitas right before eating to keep them crisp. Freezing isn’t recommended because the mango texture softens. For a dairy-free and gluten-free option, keep it as-is; for a lower-sodium version use less salt and rely on the lime dressing for flavor.
