Ingredients

  • 8 sourdough bread slices
  • 4 tsp Dijon mustard
  • 12 oz deli turkey sliced
  • 8 oz Brie thinly sliced
  • 1 pear medium, ripe but firm, cored and thinly sliced
  • 1 cup baby arugula
  • 4 tbsp butter softened

Equipment

  • 1 12-inch skillet

Method

  1. Spread Dijon on one side of 4 bread slices.
  2. Layer each with turkey, Brie, pear, and arugula, then top with the remaining bread slices.
  3. Spread butter on the outsides.
  4. Heat a 12-inch skillet over medium-low heat.
  5. Cook the sandwiches in batches of two, covered, for 3–4 minutes per side, until the bread is golden and the Brie is melted.

Notes

For an even golden crust, spread the softened butter edge to edge on the outsides of the bread. Refrigerate leftover sandwiches for up to 2 days and reheat in a skillet; freezing is not recommended. Use gluten-free sourdough bread for a gluten-free option.
