Cajun white chicken chili simmers chicken breasts, white beans, green chiles, and Cajun spices in a Dutch oven until the chicken is tender. Cream cheese makes the broth smooth, while mashed beans help thicken it.

Ingredients

  • 1 tbsp olive oil
  • 1 yellow onion medium, diced
  • 1 green bell pepper medium, diced
  • 2 ribs celery diced
  • 3 cloves garlic minced
  • 1 tbsp Cajun seasoning
  • 1 tsp dried oregano
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 4 cups low-sodium chicken broth
  • 1.5 lb chicken breasts boneless, skinless
  • 2 can (15 oz) Great Northern beans drained and rinsed
  • 1 can (4 oz) green chiles diced, undrained
  • 4 oz cream cheese softened and cut into cubes
  • 1 tbsp lime juice fresh

Equipment

  • 1 5- to 6-quart Dutch oven

Method

  1. Heat the olive oil in a 5- to 6-quart Dutch oven over medium heat.
  2. Add the onion, bell pepper, and celery and cook for 5–7 minutes, stirring occasionally, until softened.
  3. Stir in the garlic, Cajun seasoning, oregano, salt, and black pepper and cook for 30 seconds, until fragrant.
  4. Add the chicken broth, chicken breasts, beans, and green chiles and bring to a gentle simmer.
  5. Cover and cook for 15–20 minutes, until the chicken reaches 165°F in the thickest part.
  6. Transfer the chicken to a plate.
  7. Shred the chicken with two forks.
  8. Mash about 1/2 cup of the beans in the pot against the side to thicken the chili.
  9. Stir in the cream cheese over low heat for 2–3 minutes, until melted and smooth.
  10. Return the shredded chicken to the pot.
  11. Stir in the lime juice.
  12. Simmer gently for 2–3 minutes, until hot throughout.
  13. Serve.

Notes

For a thicker chili, mash the beans firmly against the side of the pot. Refrigerate leftovers for 3–4 days or freeze for up to 3 months. For a dairy-free option, use dairy-free cream cheese.
