Campfire Banana Boats

Campfire Banana Boats are unpeeled bananas split open in the peel, stuffed with chocolate chips and mini marshmallows, then melted in foil over campfire coals. The result is gooey chocolate throughout with a warm, caramelized banana bite.

Ingredients

Bananas
  • 4 ripe bananas, unpeeled Choose ripe bananas that are firm enough to hold their shape when opened.
Stuffing
  • 0.5 cup chocolate chips
  • 0.5 cup mini marshmallows
  • 0.25 cup chopped peanuts (optional) Optional topping after unwrapping.
  • 1 Chocolate syrup, for drizzling Drizzle over the finished banana boats.

Equipment

  • 1 sheet pan

Method

Prep the banana boats
  1. Slice each banana lengthwise through the peel, without cutting all the way through, to create a pocket, using an even cut so it holds together. (Visual cue: peel stays intact but banana flesh opens in a long slit.)
  2. Gently open the pocket and stuff with chocolate chips and mini marshmallows, pressing lightly so the fillings sit inside the peel. (Visual cue: chocolate and marshmallows are visible in the opening.)
Wrap and melt over campfire
  1. Wrap each banana tightly in foil so it forms a sealed packet that can sit directly over coals. (Visual cue: foil is snug around the banana with no gaps.)
  2. Place the foil packets over campfire coals for 8-10 minutes until the chocolate and marshmallows are melted. (Visual cue: foil will be hot and the inside looks glossy and gooey when ready.)
Unwrap and finish
  1. Carefully unwrap, letting the foil cool slightly to avoid burns before opening fully. (Visual cue: banana is soft and fillings look melted.)
  2. Drizzle with chocolate syrup and top with peanuts if using, distributing the toppings across the melted center. (Visual cue: glossy chocolate drizzle and a light scatter of chopped peanuts.)

Notes

Pro tip: choose bananas that are ripe but still firm enough to hold their shape when sliced, and let the foil cool slightly before unwrapping to avoid burns. Store leftovers in the fridge up to 2 days; rewarm briefly in the microwave until just warm (texture softens). Freezing is not recommended because the banana can turn watery. For a dietary swap, use dairy-free chocolate chips and dairy-free mini marshmallows to keep the same stuffed-foil method.
