Cook the filling
- Scramble the eggs in a hot cast iron skillet, then season with salt and pepper. Cook until the curds are just set, about 3-5 minutes, and pull them off the heat when they look soft and lightly glossy.
- Add the shredded hash browns to the skillet and cook until golden and crispy, stirring occasionally. Cook for about 10-15 minutes, and remove when the edges are browned and the surface looks crisp.
- Cook the bacon in the same skillet until browned, then crumble it into small pieces. The visual cue is crisp bits throughout, about 6-10 minutes total.
Assemble and freeze
- Lay out the flour tortillas and spoon in scrambled eggs, crumbled bacon, cooked hash browns, and cheddar cheese. Aim for a tight layer in the center so the burrito rolls cleanly.
- Fold in the sides and roll each tortilla tightly into a burrito. Use gentle pressure and stop rolling when the seam is underneath for a snug shape.
- Wrap each burrito individually in foil, sealing well to prevent freezer burn. Freeze until firm, and set aside with the foil-wrapped seam facing down.
Reheat for camping
- Reheat the frozen burritos over the campfire or on a grill grate until warmed through. Heat for about 15-20 minutes, turning as needed, and look for steaming centers and melted cheese.
- Serve the burritos with salsa on the side. Spoon it over the top or dip, and watch for the burrito to stay hot and the cheese to stretch slightly.
Notes
For the best texture, cook the hash browns until they’re noticeably crisp and keep the eggs slightly soft before assembling. Store wrapped burritos in the freezer up to 3 months; thawing is optional. Reheat on a grill grate or over coals until the burrito is fully steaming. For a dietary swap, use turkey bacon instead of bacon for a lighter option while keeping the same roll and bake-freezer method.
