Ingredients
  

Caprese chicken base
  • 4 boneless chicken breasts
  • 2 cup fresh mozzarella sliced
  • 2 cup cherry tomatoes halved
  • 0.25 cup balsamic glaze
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • fresh basil leaves torn
  • salt and pepper to taste

Method
 

Bake the chicken
  1. Preheat the oven to 400°F and place the chicken breasts in a baking dish.
  2. Drizzle with olive oil and season with Italian seasoning, salt, and pepper.
  3. Bake for 20 minutes, until nearly cooked through, with the oven door closed for even heat.
Add the toppings and finish
  1. Top each chicken breast with mozzarella slices and cherry tomatoes.
  2. Return to the oven for 10 minutes, until cheese is melted and bubbly.
  3. Drizzle with balsamic glaze and top with torn fresh basil before serving, for a fresh bright ribbon.

Notes

For even cooking, slice the chicken breasts to similar thickness before baking. Store leftovers in the refrigerator up to 3 days; reheat in the oven or microwave until warmed through. Freezing is not recommended because mozzarella can become watery after thawing. For a lower-fat option, use part-skim mozzarella and a lighter balsamic glaze.
