Melt the chocolate
- Melt the white chocolate chips in the microwave or over a double boiler until smooth, stirring until glossy with no lumps.
- Spread the melted white chocolate evenly onto a parchment-lined sheet pan in a thin layer for bark-style pieces.
Add caramel and toppings
- Drizzle the caramel sauce over the chocolate and swirl gently with a toothpick to create ribboned marbling.
- Sprinkle the freeze-dried apple pieces, chopped pecans, and cinnamon over the top while the chocolate is still wet.
- Finish with flaky sea salt sprinkled evenly across the surface.
Chill and break
- Chill for 1 hour until fully set, then break into pieces to serve.
Notes
For the cleanest swirls, drizzle caramel in thin ribbons and swirl only a few passes so it doesn’t fully blend. Store in a cool spot in an airtight container for up to 3 days; freezing is not recommended because the texture of white chocolate can soften after thawing. For a nut-free version, replace chopped pecans with roasted pumpkin seeds or additional freeze-dried apple pieces for crunch.
