Prep and shape
- Preheat the oven to 400°F and line a baking sheet with parchment as the oven heats. Aim for a hot, ready pan so the scones bake evenly right away.
- Cut the cold butter into the all-purpose flour until pea-sized crumbs form. Keep the butter cold and stop as soon as the texture looks like coarse crumbs.
- Stir in the heavy cream and the cinnamon apples until the dough just comes together. Do not overmix—stop when no dry flour streaks remain.
- Pat the dough into a circle and cut into wedges. Separate the wedges slightly so they don’t fuse as they rise in the oven.
Bake and finish
- Bake at 400°F for 18-20 minutes until golden brown. The edges should look set and the tops should feel firm when gently pressed.
- Drizzle the warm caramel sauce over the scones before serving. Add it right after baking so the caramel stays gooey on top.
Notes
Pro tip: keep the butter very cold and handle the dough as little as possible—overworking makes scones tough. Store airtight in the fridge for up to 3 days and rewarm briefly in the oven or toaster oven to refresh the crumb. Freezing is yes: freeze baked scones (without extra drizzle) up to 2 months, then thaw and reheat before serving. Dietary swap: use a 1:1 gluten-free all-purpose flour blend if you want gluten-free scones (texture may be slightly more crumbly).
