Ingredients

  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 2 yellow onions large, about 1 1/2 pounds, thinly sliced
  • 0.5 tsp kosher salt
  • 2 tbsp water
  • 1.5 cup sour cream
  • 0.5 cup mayonnaise
  • 1 tsp Worcestershire sauce
  • 0.5 tsp garlic powder
  • 0.25 tsp black pepper

Equipment

  • 1 12-inch skillet

Method

  1. Melt the butter with the olive oil in a 12-inch skillet over medium-low heat, then add the onions and salt.
  2. Cook for 40 to 50 minutes, stirring every few minutes, until the onions are deeply golden and very soft; lower the heat if they brown too quickly.
  3. Add the water and scrape up the browned bits from the skillet.
  4. Cook until the water evaporates.
  5. Transfer the onions to a plate and cool completely.
  6. In a medium bowl, stir together the sour cream, mayonnaise, Worcestershire sauce, garlic powder, and black pepper.
  7. Fold in the cooled onions.
  8. Cover and refrigerate for at least 1 hour before serving.

Notes

For the best texture, let the onions cool completely before folding them into the creamy base. Store covered in the refrigerator for 3 to 4 days; freezing is not recommended because the dairy can separate. For a dairy-free option, use plant-based butter and dairy-free sour cream, and check that the mayonnaise and Worcestershire sauce are dairy-free.
