Prep and pan setup
- Preheat oven to 325°F and grease two loaf pans, so the pans are ready as soon as the batter is mixed.
- Whisk the eggs, vegetable oil, granulated sugar, brown sugar, and vanilla extract in a large bowl until smooth and glossy.
- Stir in the shredded zucchini until evenly distributed throughout the wet mixture.
Mix dry ingredients and combine
- Whisk the all-purpose flour, baking soda, baking powder, salt, and cinnamon in a separate bowl until the dry ingredients are evenly blended.
- Fold the dry ingredients into the wet mixture until just combined, then fold in the chocolate chips.
Bake and cool
- Divide the batter evenly between the prepared loaf pans.
- Bake at 325°F for 50-60 minutes, until a toothpick inserted in the center comes out mostly clean.
- Cool in the pans for 10 minutes before turning out onto a wire rack.
Notes
Pro tip: toss the chocolate chips in a little flour before folding them in to help prevent sinking. Wrap tightly and store at room temperature for up to 4 days; freeze the cooled loaves (or slices) up to 2 months. For a lighter option, replace half the vegetable oil with unsweetened applesauce while keeping the same bake time.
