Assemble and toast
- Heat the broiler to high (about 500°F). Place the oven rack 6 inches from the heat and set a sheet pan under the broiler to warm briefly.
- Place a piece of chocolate on one half of a graham cracker.
- Toast the marshmallow over a fire, stove flame, or under the broiler until golden and gooey, about 30 to 60 seconds per marshmallow, with the outside turning light-golden.
- Place the toasted marshmallow on top of the chocolate, letting any melted chocolate glisten at the edges.
- Top with the second graham cracker half and press gently to sandwich, so the marshmallow and chocolate spread slightly.
Finish
- Let the heat melt the chocolate slightly before serving, about 1 to 2 minutes, until the chocolate looks softened but not runny.
Notes
Pro tip: For stovetop toasting, keep the flame low and rotate the marshmallow constantly so it toasts evenly without burning. Store assembled s’mores at room temperature for up to 2 hours (best texture); after that, the crackers soften. Freezing isn’t recommended because the graham crackers lose their crispness. If you want a less sweet option, use dark chocolate bars instead of milk chocolate.
