Ingredients

Protein bowl components
  • 1 lb ground beef Use 80/20 for best browning and juicy texture.
  • 2 cup cooked rice Use freshly cooked or fully chilled rice that can be rewarmed.
  • 2 tbsp soy sauce Provides salty umami for the searing sauce.
  • 1 tbsp brown sugar Balances the soy sauce with a gentle sweetness.
  • 1 tsp sesame oil Add near the end so aroma stays prominent.
  • 2 garlic, minced Finely minced for even flavor distribution.
  • 1 avocado, sliced Slice just before serving to prevent browning.
  • 0.5 cup pickled vegetables Choose crunchy, tangy pickles like quick-pickled vegetables.
  • 1 Sesame seeds for garnish Optional but recommended for texture and aroma.

Equipment

  • 1 cast iron skillet

Method

Sear the ground beef
  1. Heat a cast iron skillet over high heat and add the ground beef in a single layer without stirring. Sear undisturbed for 3-4 minutes until deeply browned and crispy, then break apart and stir.
  2. Cook until the beef continues to brown and crisp, about 2 minutes more, watching for dark caramelized edges. You should see a dry, crispy crust forming on the beef pieces.
Season and glaze
  1. Add the minced garlic, soy sauce, brown sugar, and sesame oil to the skillet. Cook for 2 minutes, stirring just enough to coat the beef evenly.
Assemble the bowls
  1. Divide the cooked rice among bowls. Keep the rice warm so the toppings taste fresh and slightly creamy.
  2. Top each bowl with the crispy beef, avocado slices, and pickled vegetables. Add sesame seeds for garnish and serve warm, with bright color on top.

Notes

Pro tip: Don’t stir the beef right away—letting it sit undisturbed for 3-4 minutes is what builds the deep crispy crust. Store leftovers in the fridge up to 3 days in separate containers (rice and beef) for best texture; reheat the beef in a skillet to re-crisp. Freeze: yes for the cooked beef only (up to 2 months); thaw and reheat. For a lower-sodium swap, use low-sodium soy sauce and increase pickled vegetables slightly for punch.
