Ingredients
  

Crockpot chicken taco filling
  • 2 lb boneless chicken breasts Use raw, trimmed breasts for even shredding.
  • 1 packet taco seasoning
  • 1 cup salsa
  • 0.5 cup chicken broth
  • 2 cup shredded cheddar cheese Reserve some for extra topping if desired.
Tacos assembly
  • 1 Small flour or corn tortillas Warm for best texture.
  • 1 Toppings: lettuce
  • 1 diced tomato
  • 1 sour cream

Method
 

Slow-cook the chicken
  1. Place the chicken breasts, taco seasoning, salsa, and chicken broth into the slow cooker and stir to coat the chicken.
  2. Cover and cook on low for 6-7 hours, or high for 3-4 hours, until the chicken is tender and easily pulls apart when pressed with a fork.
Shred and finish
  1. Shred the chicken directly in the slow cooker using two forks, then mix it into the sauce so every bite is coated.
  2. Sprinkle the shredded cheddar cheese over the top and keep the lid on for a few minutes until the cheese melts into the sauce and looks glossy.
Serve
  1. Serve the shredded chicken in warm tortillas and top with lettuce, diced tomato, and sour cream for a fresh, cool contrast.

Notes

For the easiest shredding, shred while the chicken is still warm so the strands separate cleanly. Refrigerate leftovers in a covered container up to 4 days; reheat gently until hot. Freezing is yes—freeze the chicken mixture (without toppings) up to 2 months and thaw in the fridge before reheating. For a lighter option, use reduced-fat shredded cheddar or part-skim cheese so the sauce stays creamy with less fat.
