Prepare the peaches
- Toss the sliced peaches with granulated sugar, cinnamon, and cornstarch, then spread them into the bottom of the Dutch oven.
- Sprinkle the yellow cake mix or biscuit mix evenly over the peaches, covering them in an even layer.
Bake over campfire coals
- Dot the top with pats of butter so the topping bakes up golden as it melts.
- Cover the Dutch oven and cook over campfire coals at 350-375°F equivalent for 30-40 minutes, with a few coals on the lid, until the filling is bubbly and the topping is golden.
Serve
- Let the Dutch oven peach cobbler cool slightly before serving so the juices thicken.
Notes
Rotate the Dutch oven occasionally during cooking to prevent hot spots from burning the topping. Store covered in the refrigerator up to 3 days; rewarm in the Dutch oven or microwave. Freezing is not recommended because the cake-mix topping can soften after thawing. For a lighter option, use a reduced-sugar granulated sweetener in place of the sugar (texture may be slightly less syrupy).
