Bake the cookies
- Preheat the oven to 350°F and line a sheet pan for easy transfer. Arrange the pan so cookies can bake evenly without overcrowding.
- Cream butter and sugar together until fluffy. Mix until the color lightens and the texture looks aerated.
- Beat in the egg, vanilla extract, lime zest, and 2 tbsp lime juice. Keep mixing until the batter is smooth and glossy.
- Fold in the flour and baking powder until just combined. Stop mixing as soon as no dry streaks remain to keep the cookies tender.
- Scoop dough onto the prepared sheet pan, spacing them apart. Bake for 10-12 minutes at 350°F until the edges are just golden.
Make and add the lime glaze
- Whisk powdered sugar with the remaining lime juice until smooth. The glaze should be pourable and thick enough to coat.
- Drizzle the glaze over cooled cookies. Let the glaze set before stacking or serving.

Pro tip: zest the key limes before juicing them—zesting is much easier when the fruit is firm. Store cookies in an airtight container at room temperature for up to 3 days or in the fridge for up to 5 days; freeze baked cookies for up to 2 months (glaze after thawing for best texture).
