Method
Brew and cool the green tea
- Brew the green tea, then cool it completely at room temperature before using.
- Set the cooled green tea aside so it reaches a drinkable chill level before mixing.
Muddle and mix the lemonade
- Muddle the ripe figs in the bottom of a pitcher until the pieces break down and release fragrance.
- Add the cooled green tea, fresh lemon juice, and honey or simple syrup to the pitcher, then stir to combine.
- Add the thinly sliced pear and fresh mint leaves, then gently stir so the fruit is evenly distributed.
Chill and serve
- Chill the pitcher for at least 30 minutes to let the flavors meld.
- Serve over ice, garnished with extra mint leaves and additional pear slices.
Notes
Pro tip: use very ripe, soft figs so they muddle easily and infuse faster. Store covered in the refrigerator up to 2 days; the fruit flavors keep developing slightly. Freezing isn’t recommended because the fruit texture and mint flavor can degrade. Dietary swap: use maple syrup instead of honey or simple syrup for a different sweetness profile (still keep it vegan if needed).
