Fruity Frozen Yogurt Bark

Fruity frozen yogurt bark is a no-bake summer treat made by spreading vanilla yogurt thin, studding it with fresh berries, and freezing until crackable. You’ll get crunchy ruby-red shards that break cleanly straight from the freezer.

Ingredients

plain or vanilla Greek yogurt
  • 2 cup plain or vanilla Greek yogurt use plain for less sweetness, or vanilla for more flavor
honey or maple syrup
  • 2 tbsp honey or maple syrup choose honey or maple syrup; add gradually if you prefer it less sweet
mixed fresh berries, sliced
  • 1 cup mixed fresh berries, sliced (strawberries, blueberries, raspberries) slice strawberries; keep berries bite-size
granola, crushed
  • 2 tbsp granola, crushed crush lightly so it stays crunchy in the bark
mini chocolate chips (optional)
  • 1 tbsp mini chocolate chips (optional) optional, for extra chocolate pops

Equipment

  • 1 sheet pan

Method

Prepare and spread
  1. Line a sheet pan with parchment paper.
  2. In a bowl, stir the honey into the yogurt until smooth.
  3. Spread the yogurt evenly onto the parchment in a thin layer, about 1/4 inch thick.
Top and freeze
  1. Scatter the sliced berries, crushed granola, and chocolate chips evenly over the top.
  2. Freeze for at least 3 hours, or until completely solid, keeping the pan level so the bark sets evenly.
Serve
  1. Break into shards and serve immediately, or store in the freezer for later.

Notes

Pro tip: work quickly after assembling so the yogurt stays workable and the surface doesn’t melt before freezing. Store sealed in a freezer bag for up to 2 weeks; for best texture, thaw at most 2 minutes before serving. Freezer yes—freeze the bark fully solid before bagging. If you want a dairy-free option, use plain coconut yogurt or soy yogurt with similar thickness, and expect a slightly softer snap.
