Ingredients

  • 1 lb green beans fresh, trimmed and patted dry
  • 1.5 tbsp olive oil
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 3 cloves garlic minced
  • 0.33 cup Parmesan cheese finely grated

Equipment

  • 1 18x13-inch rimmed baking sheet

Method

  1. Heat the oven to 425°F and arrange a rack in the center.
  2. Toss the green beans on an 18x13-inch rimmed baking sheet with the olive oil, salt, and pepper, then spread them in a single layer.
  3. Roast for 10 minutes.
  4. Scatter the garlic and Parmesan over the beans, then toss to coat.
  5. Roast for 4 to 6 minutes more, until the beans are tender-crisp and browned in spots and the cheese is lightly golden.

Notes

Pat the green beans completely dry so they roast rather than steam. Refrigerate leftovers for 3 to 4 days; freezing is not recommended because the beans can turn soft. For a dairy-free variation, replace the Parmesan with nutritional yeast.
