Make the lemon-garlic marinade
- Whisk together olive oil, lemon juice, garlic, dried oregano, cumin, paprika, salt, and pepper until smooth and evenly combined.
- Keep the marinade ready so the chicken can absorb it right away.
Marinate and cook the chicken
- Pound the chicken breast to an even thickness so it cooks uniformly.
- Marinate the chicken for 30 minutes, up to a few hours, turning once if needed.
- Heat olive oil in a skillet over medium-high heat until it shimmers, then add the chicken.
- Cook for 8 to 10 minutes, until cooked through, then slice and set aside.
Build the cucumber salad
- Toss diced English cucumber with a squeeze of lemon juice, olive oil, and fresh dill until coated.
Assemble and meal prep
- Divide cooked rice, sliced chicken, cucumber salad, cherry tomatoes, red onion, and feta evenly into meal prep containers.
- Refrigerate for up to 5 days and serve cold or reheated.
