Ingredients
  

Chicken
  • 2 chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 cloves garlic cloves, minced
  • 1 tsp dried oregano
  • Salt and pepper, to taste
Tzatziki
  • 1 cup Greek yogurt
  • 0.5 cucumber, grated and drained
  • 1 tbsp fresh dill
  • Salt and pepper, to taste
Fries
  • 2 cup frozen fries
  • Salt and pepper, to taste

Method
 

Marinate the chicken
  1. In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, and salt and pepper, then add the chicken breasts and turn to coat. Let it marinate at room temperature for 20 minutes, with the chicken visibly coated in the herb mixture.
Bake the fries
  1. Preheat the oven to 425°F, then spread the frozen fries in a single layer on a sheet pan and season with salt and pepper. Bake for 15–25 minutes until golden and crisp at the edges.
Cook the chicken
  1. Heat a cast iron skillet over medium-high heat until hot, then add the marinated chicken. Cook for 6–7 minutes per side until cooked through, with a deep golden-brown exterior.
  2. Transfer the chicken to a plate and let it rest for 5 minutes before slicing to keep the juices settled. The chicken should stay glossy rather than releasing a lot of liquid.
Make tzatziki
  1. In a bowl, stir Greek yogurt, grated cucumber, and fresh dill, then season with a pinch of salt. Mix until smooth and cool-looking, with visible cucumber flecks throughout.
Plate and serve
  1. Slice the chicken and plate it alongside the baked fries and tzatziki. Serve immediately so the fries stay crisp and the tzatziki stays chilled.

Notes

Pro tip: drain the grated cucumber very well (press in a clean towel) so the tzatziki stays thick instead of watery. Store leftover chicken and fries in the fridge up to 3 days; store tzatziki separately up to 3 days. Freezing tzatziki can make it watery after thawing, so avoid freezing it. Dietary swap: use dairy-free yogurt in the same ratio to make a lactose-free version.
