Make the ranch filling and assemble
- Mix the softened cream cheese, ranch seasoning mix, and shredded sharp cheddar together in a medium bowl until smooth and evenly combined.
- Spread about one-fifth of the mixture onto each large flour tortilla in an even layer, keeping a small border clear near the edges.
- Layer sliced deli ham and chopped green onions over the cream cheese mixture on each tortilla, distributing them across the surface.
- Roll each tortilla tightly into a log, pressing gently along the seam to seal so the pinwheels hold together when sliced.
Chill and slice
- Refrigerate the logs for 1 to 2 hours, or until fully chilled and firm to prevent messy cutting.
- Slice each log into half-inch pinwheels and arrange on a platter to serve, showing distinct spiral layers at the cut edges.
Notes
For clean pinwheels, chill until the logs feel firm to the touch before slicing. Store in an airtight container in the refrigerator for up to 4 days. Freeze the pinwheels for up to 2 months; thaw overnight in the fridge before serving. For a lower-fat swap, use reduced-fat cream cheese and reduced-sodium deli ham while keeping the ranch seasoning amount the same.
