Ingredients

Kale salad base
  • 1 bunch kale Stemmed and chopped.
  • 1 can (15 oz) chickpeas Drained and dried.
  • 1 tbsp olive oil
  • 0.5 tsp smoked paprika
  • 1 apple Diced.
  • 0.33 cup dried cranberries
  • 0.25 cup shaved Parmesan
Maple tahini dressing
  • 3 tbsp tahini
  • 2 tbsp maple syrup
  • 2 tbsp lemon juice

Equipment

  • 1 sheet pan

Method

Roast the chickpeas
  1. Heat oven to 425°F. Spread drained and dried chickpeas on a sheet pan and toss with olive oil and smoked paprika until coated.
  2. Roast at 425°F for 25 minutes, stirring once halfway through, until crisp and lightly browned (look for dry, crackly edges). Let cool slightly so they stay crunchy.
Massage and build the salad
  1. Add chopped kale to a bowl and pour in a few tablespoons of dressing. Massage for 2 minutes until the kale softens and darkens and feels less bitter.
  2. Add diced apple, dried cranberries, and shaved Parmesan to the massaged kale. Toss to distribute the fruit and cheese evenly.
Dress and finish
  1. Whisk tahini, maple syrup, and lemon juice until smooth and creamy. Add a splash of water if needed to loosen to a pourable consistency (aim for silky, not thick).
  2. Toss the salad with the dressing just until coated. Top with the crispy chickpeas right before serving so they keep their crunch.

Notes

Pro tip: massaging for 2 minutes helps soften kale and reduces bitterness. Store assembled salad and dressing separately in the fridge up to 3 days; keep roasted chickpeas in an airtight container up to 3 days for best crunch. Freezing: no. Dietary swap: for dairy-free, replace Parmesan with nutritional yeast or toasted pepitas.
