Ingredients

  • 1.5 lb carrots peeled and cut into 1/4-inch-thick rounds
  • 0.5 cup water
  • 0.5 tsp kosher salt
  • 3 tbsp unsalted butter
  • 3 tbsp honey
  • 0.25 tsp black pepper

Equipment

  • 1 12-inch skillet

Method

  1. Combine the carrots, water, and salt in a 12-inch skillet.
  2. Cover and bring to a boil over medium-high heat.
  3. Reduce the heat to medium-low and simmer, covered, for 8 to 10 minutes, until the carrots are fork-tender.
  4. Uncover and carefully drain any remaining water.
  5. Add the butter, honey, and black pepper.
  6. Cook over medium heat for 2 to 3 minutes, tossing often, until the butter and honey coat the carrots in a glossy glaze.

Notes

For an even cook, cut the carrots into uniform rounds. Refrigerate leftovers for 3 to 4 days; freezing is not recommended because the carrots can soften. For a dairy-free option, use olive oil in place of the butter.
