Ingredients

Italian sausage
  • 1 lb Italian sausage
Yellow onion, diced
  • 1 yellow onion, diced
Garlic cloves, minced
  • 4 garlic cloves, minced
Crushed tomatoes
  • 1 can (28 oz) crushed tomatoes
Chicken broth
  • 4 cup chicken broth
Italian seasoning
  • 1 tbsp Italian seasoning
Broken lasagna noodles
  • 8 oz broken lasagna noodles
Heavy cream
  • 0.5 cup heavy cream
Ricotta
  • 1 cup ricotta
Grated Parmesan
  • 0.5 cup grated Parmesan

Equipment

  • 1 Instant Pot

Method

Sauté aromatics and sausage
  1. Set the Instant Pot to Sauté and cook the Italian sausage with the diced yellow onion and minced garlic until browned, stirring occasionally, about 5 minutes. Visual cue: the sausage should lose its pink color and the onion should look softened.
Build the soup
  1. Add the crushed tomatoes, chicken broth, and Italian seasoning, then place the broken lasagna noodles on top without stirring. Visual cue: the noodles should sit as a layer above the liquid (no mixing into the broth).
Pressure cook
  1. Seal the lid and pressure cook on high for 5 minutes. Visual cue: the Instant Pot display should read the full pressure-cook time before the countdown ends.
  2. Use a quick release to stop the cooking. Visual cue: the floating valve drops and the steam vents shortly after.
Finish with cream and cheeses
  1. Stir in the heavy cream until the broth looks silky and evenly tinted. Visual cue: you should see a smooth, lighter-red consistency with no cream streaks.
  2. Top the soup with ricotta and grated Parmesan. Visual cue: the cheeses should sit on top and begin to soften from the hot soup rather than fully disappear.

Notes

Pro tip: Keep the noodles layered on top and don’t stir before pressure cooking—this helps prevent sticking or a burn notice. Store leftovers in the refrigerator for up to 3 days; reheat gently until hot. Freezing isn’t recommended because the noodles and dairy can change texture after thawing. For a lighter option, swap the heavy cream for half-and-half.
