Lemon Chicken And Asparagus Foil Packets

Lemon chicken and asparagus foil packets cook in a sealed packet so the chicken stays juicy and the asparagus turns crisp-tender. Bright lemon slices and minced garlic steam right alongside the chicken for fast, mess-free campfire grilling.

Ingredients

Chicken breast
  • 4 boneless chicken breasts
Asparagus
  • 1 bunch asparagus, trimmed
Lemon
  • 2 lemons, sliced
Garlic
  • 3 clove garlic cloves, minced
Olive oil
  • 3 tbsp olive oil
Oregano
  • 1 tsp dried oregano
Salt and pepper
  • 0.25 tsp Salt and pepper, to taste Season to taste.

Equipment

  • 1 sheet pan
  • 1 cast iron skillet

Method

Make the foil packets
  1. Lay out 4 large sheets of heavy-duty foil on a work surface.
  2. Place a boneless chicken breast and a portion of trimmed asparagus on each sheet.
  3. Drizzle each portion with olive oil, then sprinkle with minced garlic, dried oregano, plus salt and pepper to taste.
  4. Top each packet with a few lemon slices.
  5. Fold and seal the foil packets tightly so steam stays inside.
Grill
  1. Grill the sealed foil packets over the campfire or on a grill for 15-20 minutes, until the chicken is cooked through, keeping the foil closed during cooking.

Notes

For even cooking, cut the asparagus stalks to match the chicken’s length. When opening packets, pull them away from your face because steam will escape. Store leftovers in an airtight container in the fridge for up to 3 days; reheat gently until hot throughout—freezing is not recommended due to texture changes in asparagus.
