Ingredients

Meat base
  • 1 lb ground beef or sausage
  • 1 yellow onion, diced
  • 4 garlic cloves, minced
Soup
  • 1 can (28 oz) crushed tomatoes
  • 4 cup chicken broth
  • 1 tbsp Italian seasoning
  • 8 oz broken lasagna noodles
Cheese topping
  • 1 cup ricotta
  • 1.5 cup shredded mozzarella
To serve
  • 1 Fresh basil, for serving

Equipment

  • 1 Dutch oven

Method

Brown the meat
  1. In an oven-safe Dutch oven over medium-high heat, cook the ground beef or sausage with the diced yellow onion and minced garlic until browned, about 6-8 minutes, stirring to break up clumps. You should see no pink and the onion should look softened and glossy.
Build the soup
  1. Add the crushed tomatoes, chicken broth, and Italian seasoning, then bring the mixture to a boil. Look for active bubbling that keeps going across the surface.
  2. Stir in the broken lasagna noodles and return to a boil, then cook for 10 minutes, stirring occasionally so they don’t stick. The noodles should be tender but still hold their shape.
Top and broil
  1. Spoon the ricotta over the hot soup and sprinkle with the shredded mozzarella for even coverage. The cheese should sit on top rather than fully mixing in.
  2. Broil on high for 2 minutes until the cheese toasts and turns golden at the edges. Watch closely so it doesn’t burn; you should see browned spots and bubbling cheese.
Serve
  1. Finish with fresh basil for serving and let the soup stand for 2 minutes before eating. The surface will thicken slightly as the cheese settles.

Notes

Pro tip: Use an oven-safe pot so you can broil in the same container without transferring. Store leftovers in the refrigerator up to 3 days; reheat gently on the stovetop or in the microwave, adding a splash of broth if it thickens too much. Freezing is not recommended because the noodles can become softer after thawing. For a lighter option, use ground turkey or chicken sausage and part-skim mozzarella.
