Ingredients

Base ingredients
  • 2 tbsp butter Use salted or unsalted butter as you prefer.
  • 1 yellow onion, diced Dice evenly so it softens at the same rate.
  • 3 potatoes, cubed Cubed potatoes help the soup simmer quickly and blend smoothly.
  • 3 ripe pears, peeled and cubed Use ripe pears for natural sweetness and fragrance.
  • 4 cup vegetable broth Choose low-sodium if you want better control of seasoning.
  • 0.5 cup cream Heavy cream or half-and-half both work; add after blending.
  • 1 Salt and pepper, to taste Season at the end so you can adjust after blending.

Equipment

  • 1 Dutch oven

Method

Sauté the aromatics
  1. Melt the butter in a Dutch oven over medium heat until it foams. Add the diced onion and sauté until softened and fragrant, about 5 minutes, with a light golden color.
Simmer until tender
  1. Add the cubed potatoes, peeled and cubed pears, and vegetable broth to the Dutch oven. Bring to a gentle simmer and cook for 20 minutes, until the potatoes are very tender and easily pierced.
Blend smooth
  1. Blend the soup until silky smooth, then return it to the Dutch oven if needed. Blend in batches if the mixture is hot and fills the blender too much.
Finish with cream
  1. Stir in the cream and season with salt and pepper to taste. Heat just until warmed through over low heat, about 2 minutes, without boiling.
Serve
  1. Ladle the soup into bowls and finish with a cream swirl on top. Serve warm for the creamiest texture.

Notes

Pro tip: Use ripe pears (slightly soft with strong aroma) so the soup turns naturally sweet without extra sugar. Refrigerate leftovers in a sealed container for up to 4 days; reheat gently on the stove. Freezing is not recommended because cream and blended potatoes can change texture after thawing. For a dairy-free swap, replace the cream with full-fat coconut milk and use a plant-based butter for a similar silky finish.
