Prep and preheat
  1. Preheat the oven to 375°F and line a muffin tin with paper liners.
  2. Fill muffin cups about 3/4 full to allow rising room.
Make spiced batter
  1. Whisk all-purpose flour, baking soda, pumpkin pie spice, and salt together in a bowl.
  2. Beat pumpkin puree, vegetable oil, eggs, and brown sugar until smooth, then fold into the dry ingredients until just combined.
Add streusel and bake
  1. Divide the batter evenly among the muffin liners.
  2. Mix flour, brown sugar, and cold butter cubes until crumbly, then sprinkle streusel over each muffin.
  3. Bake for 18-20 minutes, until a toothpick comes out clean.
Maple finish
  1. Drizzle warm maple syrup over the muffins right before serving.
