Preheat and prepare the pan
- Preheat the oven to 350°F and grease a 9x5-inch loaf pan.
- Set the loaf pan on a sheet pan so it bakes evenly.
Mix the dry ingredients
- Whisk together the all-purpose flour, baking soda, salt, and pumpkin pie spice until evenly combined.
Mix the wet ingredients
- Mix the pumpkin puree, granulated sugar, vegetable oil, and eggs until smooth and glossy.
Combine and bake
- Fold in the shredded zucchini, making sure it is evenly distributed throughout the batter.
- Combine the wet and dry ingredients until just mixed, stopping as soon as no dry flour remains.
- Pour the batter into the prepared loaf pan, smoothing the top with a light shake of the pan.
- Bake at 350°F for 55-60 minutes, until a toothpick in the center comes out clean or with a few moist crumbs and the loaf is fragrant.
Cool and unmold
- Cool in the pan for 10 minutes before turning out onto a rack to finish setting.
Notes
Squeeze the shredded zucchini very well before measuring so the loaf stays tender instead of dense or wet. Store airtight at room temperature for up to 3 days, or refrigerate for up to 5 days; freeze whole or sliced for up to 2 months. For a dairy-free option, choose a non-dairy egg substitute that is cup-for-cup compatible (results may vary slightly).
