Ingredients
  

Pound cake, cubed
  • 1 lb pound cake Cubed for easy layering.
Instant cheesecake or vanilla pudding mix
  • 1 box instant cheesecake or vanilla pudding mix Use the 3.4–5.1 oz box size called for by the brand.
Milk
  • 2 cup milk Cold helps the mixture thicken evenly.
Sour cream
  • 0.5 cup sour cream Adds tang and extra body to the pudding layers.
Whipped cream
  • 2 cup whipped cream Use lightly beaten whipped cream so it folds in cleanly.
Fresh strawberries, sliced
  • 2 cup fresh strawberries Slice for even fruit layers.
Fresh blueberries
  • 2 cup fresh blueberries Rinse and pat dry to prevent excess moisture.

Method
 

Make the pudding-whipped cream
  1. Whisk milk, sour cream, and instant cheesecake or vanilla pudding mix in a large bowl until thickened, about 2 minutes, then stop when the mixture holds soft peaks (no heat).
  2. Fold the whipped cream into the thickened pudding mixture until just combined, with no long mixing so it stays airy.
Layer the trifle
  1. Place half of the pound cake cubes in the bottom of a trifle dish to form the first layer, pressing lightly only to level.
  2. Layer one-third of the fresh strawberries over the cake, then sprinkle one-third of the fresh blueberries on top so you can see both colors.
  3. Spoon half of the pudding-whipped cream mixture over the fruit and spread gently to the edges to seal the layer.
  4. Repeat the layers once more with the remaining one-third strawberries and one-third blueberries, followed by the rest of the pudding-whipped cream.
  5. Top with the remaining fresh berries and chill until ready to serve, at 35–40°F (2–4°C) for 2 hours so the layers set.

Notes

Pro tip: use cold milk and avoid overmixing after adding the whipped cream, or the texture can turn loose. Refrigerate covered for 3 days; the berries may weep slightly after day 2 but it’s still delicious. Freezing is not recommended for trifle layering. For a lighter option, swap whipped cream for light whipped topping (or use half the whipped cream and increase the milk by 1/2 cup) to reduce richness while keeping the same layer structure.
