Whip the filling
- Whip ricotta cheese with honey and lemon zest until smooth and fluffy, scraping down as needed for an even texture.
Assemble the bites
- Spread the whipped ricotta onto crackers or toasted baguette slices in an even layer.
- Sprinkle crushed pistachios generously over each bite so the topping fully covers the ricotta.
- Drizzle with extra warm honey and add a pinch of flaky sea salt to finish each bite.
- Serve immediately while crackers are crisp.
Notes
For the fluffiest texture, whip the ricotta until it looks airy and uniform, not grainy. Warm the honey slightly so it drizzles in thin ribbons. Store leftovers in an airtight container in the refrigerator up to 2 days; assemble only before serving for best crispness. Freezing isn’t recommended for the crackers or for the best texture after whipping. For a lighter option, use part-skim ricotta instead of whole milk ricotta.
