poblano peppers
  • 3 poblano peppers Char, steam, peel, seed, and dice.
butter and aromatics
  • 2 tbsp butter
  • 1 onion Small onion, chopped.
  • 3 garlic cloves Minced.
thickener and broth
  • 0.25 cup all-purpose flour
  • 4 cup chicken or vegetable broth Use chicken or vegetable depending on preference.
corn and potatoes
  • 3 cup corn kernels Fresh, frozen, or canned; kernels only.
  • 1 cup diced potatoes
cream and seasoning
  • 1 cup heavy cream
  • 1 salt and pepper To taste.

Method
 

Char and prep the poblanos
  1. Char the poblano peppers under a broiler or over an open flame until blackened, then transfer to a covered bowl and steam for 10 minutes.
  2. Peel, seed, and dice the charred poblano peppers, then set them aside.
Build the chowder base
  1. Melt the butter in a large pot over medium heat, then saute the chopped onion until soft.
  2. Add the minced garlic and cook until fragrant, about 30 seconds.
  3. Whisk in the all-purpose flour and cook for 1 minute.
  4. Gradually whisk in the chicken or vegetable broth until smooth.
Simmer
  1. Add the diced potatoes and simmer until tender, about 15 minutes at a gentle bubbling state.
  2. Stir in the corn kernels, diced poblanos, and heavy cream.
  3. Simmer for another 10 minutes, then season with salt and pepper to taste.
