Ingredients

Chili Base
  • 3 cup shredded rotisserie chicken
  • 2 can (15 oz) white beans, drained
  • 1 can (4 oz) green chiles
  • 1 yellow onion, diced
  • 3 clove garlic cloves, minced
  • 4 cup chicken broth
  • 2 tsp cumin
  • 1 cup shredded cheddar

Equipment

  • 1 sheet pan

Method

Sauté the aromatics
  1. Heat a pot over medium heat and sauté the diced onion and minced garlic until fragrant, about 3 minutes, stirring so the garlic doesn’t brown. The mixture should look slightly softened and smell aromatic.
Simmer the chili
  1. Add the drained white beans, green chiles, chicken broth, and cumin to the pot and bring to a gentle simmer, then simmer for 15 minutes. Keep the surface at a steady bubble, not a hard boil.
Cook in the chicken
  1. Stir in the shredded rotisserie chicken and cook for 5 minutes on the simmer. The chili should look cohesive and the chicken warmed through.
Broil the cheddar top
  1. Ladle the chili into oven-safe bowls and top each with shredded cheddar. Arrange the bowls on a sheet pan so they cook evenly under the broiler.
  2. Broil for 2 minutes until the cheddar is melted and lightly browned. Watch closely so the top bubbles but doesn’t burn.

Notes

Pro tip: mash a few beans with the back of a spoon right after simmering to naturally thicken the broth. Refrigerate leftovers in a sealed container for up to 4 days; freeze up to 2 months (add cheese after reheating for best texture). For a lighter option, use reduced-fat cheddar and keep the same broil timing.
