Preheat and mix

- Cream butter, brown sugar, and sugar together until fluffy.
- Beat in eggs and vanilla until the mixture looks smooth and well combined.
Fold and portion
- Fold in flour until just combined, then fold in chocolate chips and chopped pistachios.
- Scoop dough onto a baking sheet and sprinkle each portion with flaky sea salt.
Bake
- Bake for 11-13 minutes at 350°F until the edges are golden-brown, keeping the centers slightly soft-looking.
Notes
Chop the pistachios coarsely so you still get satisfying crunch in every bite. Store cookies in an airtight container at room temperature for up to 4 days, or refrigerate up to 5 days; freeze baked cookies up to 2 months. For a dairy-light option, use a 1:1 plant-based butter stick and keep the same mixing and baking times.
