Build the slow cooker base
- Add the beef stew meat and baby potatoes to the slow cooker in an even layer.
- Melt the butter, then stir in the garlic, beef broth, Worcestershire sauce, dried thyme, salt, and pepper until combined.
- Pour the garlic butter mixture over the beef and potatoes so everything is well coated.
Slow cook until fork-tender
- Cover and cook on LOW for 7-8 hours, until the beef is fork-tender and the potatoes are soft when pierced.
- If cooking on HIGH instead, cover and cook for 4 hours, until the beef is fork-tender and the potatoes are soft when pierced.
Finish and serve
- Turn off the slow cooker and garnish with fresh parsley right before serving.
Notes
For the richest flavor, sear the beef cubes in a hot skillet until browned before adding them to the slow cooker (optional). Refrigerate leftovers in a sealed container for up to 3-4 days; freeze cooked beef and potatoes for up to 2-3 months. For a lower-carb swap, you can use baby turnips in place of baby potatoes, keeping the same cooking times.
