Season and layer
- Toss the beef stew meat with onion powder, garlic powder, and seasoned salt until evenly coated.
- Place the seasoned beef in one half of the slow cooker and the halved baby potatoes in the other half.
- Sprinkle the fresh garlic evenly over the top.
- Cut the butter into pads and arrange over the beef and potatoes so it melts throughout the cook.
- Pour in the beef broth and Worcestershire sauce.
Slow cook
- Cover and cook on LOW for 6 hours, until the beef is tender and the potatoes are soft.
- Garnish with fresh thyme before serving.
Notes
For best results, keep the lid closed during the 6-hour low cook so the gravy stays rich and the potatoes soften evenly. Store leftovers in the refrigerator up to 4 days; freeze in a sealed container up to 2 months. For a lighter option, use reduced-sodium beef broth and swap part of the butter for olive oil, but still add the full garlic for the same punch.
