Mix the filling
  1. Combine shredded chicken, black beans, corn, shredded cheddar cheese, diced red bell pepper, cumin, and chili powder in a bowl until evenly mixed.
  2. Check the mixture texture and let it sit briefly if needed so it’s easy to spoon into wrappers.
Assemble the egg rolls
  1. Lay out an egg roll wrapper and spoon filling into the center, keeping the amount moderate so it can roll without bursting.
  2. Fold the sides in and roll tightly, sealing the edge with a bit of water to close.
Fry until crisp
  1. Heat oil in a deep cast iron skillet to 350°F with enough depth for the egg rolls to fry.
