canned chickpeas
  • 3 can (15 oz) chickpeas Drain, rinse, and pat dry thoroughly for best crispiness.
harissa and aromatics
  • 3 tbsp harissa paste Adjust to taste if you prefer less heat.
  • 2 cloves garlic Minced before mixing with the harissa.
  • 1 tsp smoked paprika Adds warmth and a smoky flavor.
seasoning and finish
  • 3 tbsp olive oil Tossing helps the chickpeas roast crisp and brown.
  • 1 tbsp fresh lemon juice Stirs in at the end for tangy balance.
  • 1 Fresh parsley Chopped or left whole for garnish.
  • 1 Salt To taste.

Method
 

Roast the chickpeas
  1. Preheat the oven to 425°F and line a sheet pan. Pat the drained chickpeas very dry, then toss with olive oil and salt on the baking sheet until evenly coated.
  2. Roast at 425°F for 20-25 minutes, shaking the pan halfway. Look for deep browning and crispy edges, with chickpeas sounding more hollow as they crisp.
Make the harissa coating
  1. Whisk harissa paste with minced garlic, smoked paprika, and fresh lemon juice in a small bowl. Mix until smooth and glossy with no streaks of harissa.
Toss and serve
  1. Immediately toss the hot roasted chickpeas with the harissa mixture until evenly coated. The heat should help the sauce cling and turn tacky for a thick coating.
  2. Garnish with fresh parsley before serving. Finish with a quick taste for salt and serve hot from the pan.

Notes

For maximum crunch, pat chickpeas as dry as possible before roasting and spread them in a single layer on the sheet pan. Toss with harissa right after roasting while the chickpeas are hot so the sauce adheres instead of sliding off. Store leftovers in an airtight container in the fridge for up to 3 days; re-crisp in a 400°F oven for 6-8 minutes. Freezing isn’t recommended because the texture will soften. For a gluten-free option, confirm your harissa paste contains no added gluten-based thickeners.
