  • 19 oz frozen cheese tortellini Use store-bought frozen tortellini for quick cooking.
  • 28 oz can petite diced tomatoes Petite diced for a smoother sauce base.
  • 4 oz cream cheese Cut into chunks so it melts evenly.
  • 2 cup fresh spinach, chopped Chop and fold in at the end to keep it tender.
  • 2 tbsp basil pesto Drizzle to finish; add after portioning for best flavor.
  • 0.25 cup grated Parmesan cheese Top packed portions for a salty, nutty finish.
  • 0.5 tsp dried oregano Adds classic Italian herb flavor to the tomato sauce.
  • 1 Salt and pepper, to taste Season the sauce and pasta to preference.

Method
 

Cook tortellini
  1. Bring a pot of water to a boil, then cook the tortellini until it floats, about 3 minutes, and drain.
  2. Set the drained tortellini aside so it can be tossed immediately with the sauce.
Make creamy tomato spinach sauce
  1. In a skillet over medium heat, heat the diced tomatoes with oregano, salt, and pepper for 3 minutes, stirring until fragrant and slightly thickened, with visible tomato bubbles.
  2. Add the cream cheese in chunks and stir until melted into a smooth, creamy sauce for 2 minutes, keeping the heat at medium to avoid scorching.
  3. Fold in the chopped spinach and cook just until wilted for 1-2 minutes, stirring until bright green and tender.
Toss and pack
  1. Toss the drained tortellini into the sauce until fully coated for 2 minutes, with glossy sauce clinging to the pasta.
  2. Portion into bento box compartments, drizzle with pesto, and top with Parmesan before packing.

Notes

For smoother sauce, let the cream cheese sit at room temperature for 5 minutes before adding, then stir until fully melted. Refrigerate bento portions in an airtight container up to 3 days; pesto and Parmesan can be added right before sealing for best color and flavor. Freeze the tortellini without the pesto and Parmesan for up to 2 months, then thaw and reheat on the stove; stir in pesto after reheating. For a lighter option, use low-fat cream cheese and part-skim Parmesan to reduce calories while keeping the creamy texture.
