  • 0.5 cup unsalted butter, softened
large egg
  • 1 large egg
cream cheese
  • 8 oz cream cheese, softened
granulated sugar
  • 0.33 cup granulated sugar
vanilla extract
  • 1 tsp vanilla extract
strawberries
  • 2 cup strawberries, hulled and sliced
strawberry glaze or jam
  • 0.25 cup strawberry glaze or jam, warmed Warm so it brushes on smoothly.

Method
 

Make and bake the sugar cookie crust
  1. Preheat oven to 350°F, then press cookie dough into a round pizza pan to form an even crust.
  2. Bake at 350°F for 12-14 minutes until golden, then cool completely before topping.
Prepare the cream cheese layer
  1. Beat cream cheese, granulated sugar, and vanilla extract until smooth and fluffy.
  2. Spread the cream cheese mixture evenly over the cooled crust.
Assemble the strawberry topping
  1. Arrange the sliced strawberries in overlapping circles across the top.
  2. Brush the warmed strawberry glaze or jam over the fruit for a glossy finish.
  3. Chill for 30 minutes before slicing into wedges to serve.

Notes

Cool the crust fully before adding the cream cheese layer so it doesn’t melt or slip. For storage, refrigerate covered for up to 3 days (best texture within 24 hours); freeze only the baked, cooled crust for up to 1 month, then thaw and assemble with fresh strawberries. For a dairy-free option, use a dairy-free cream cheese substitute and plant-based butter in the crust.
