Method
Hard-boil and prep the eggs
- Bring a pot of water to a boil, then add the eggs and boil for 10 minutes. Cool the eggs until safe to handle, then peel and halve them lengthwise.
- Scoop out the yolks and place the egg white halves on a sheet pan. Keep the whites intact so they can hold the filling.
Make the yolk swirl filling
- Mash the yolks with mayonnaise, Dijon mustard, vinegar, and paprika until smooth. Continue pressing and mixing until you get a thick, pipeable texture.
Fill and decorate like turkeys
- Pipe the yolk mixture into the egg whites in a swirl pattern. Aim for the center so each egg forms a “head” shape.
- Press candy corn pieces into the back of each deviled egg to form feathers. Add the pieces close together so the turkey look is clear.
- Place two mini chocolate chips on the front for eyes. Serve right away for the neatest turkey faces.
Notes
Assemble the deviled eggs right before serving so the whites stay firm and the swirl looks fresh. Store leftovers covered in the refrigerator up to 2 days; the texture may soften slightly. Freezing is not recommended for deviled eggs with mayo-based filling. For a lighter option, use light mayonnaise to reduce calories while keeping the filling creamy.
