Assemble the roll-ups
- Spread each tortilla with a thin, even layer of softened cream cheese, covering nearly to the edges.
- Layer turkey slices, cheddar cheese slices, and shredded lettuce over the cream cheese in an even distribution.
- Drizzle with ranch or mayo over the filling so it coats lightly but doesn’t puddle.
- Roll each tortilla up tightly into a log, pressing gently to keep it compact.
Chill and slice
- Wrap each rolled log in plastic wrap and refrigerate for at least 30 minutes to help them hold their shape.
- Unwrap and slice into 1-inch pinwheels before serving so the spirals stay intact.
Notes
Pro tip: chill the rolled logs before slicing so the tortilla doesn’t unravel and the spiral stays tight. Store pinwheels in an airtight container in the refrigerator for up to 3 days. Freezing is not recommended because tortillas can lose texture when thawed. For a lighter option, swap mayo for Greek yogurt ranch-style spread to reduce richness without changing the roll-up format.
