Walking tacos combine seasoned taco beef with melty cheddar and crunchy corn chips in individual grab-and-go bags. Brown and simmer the beef until thick, then assemble right into chips for an easy tailgate build.

Ingredients
  

Walking taco filling
  • 1 lb ground beef
  • 1 taco seasoning
  • 1 Individual bags of corn chips (like Fritos)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 0.5 cup sour cream
  • 0.5 cup salsa

Method
 

Brown and simmer the taco beef
  1. Brown the ground beef in a skillet over medium-high heat until no pink remains, then spread it into an even layer for quick cooking.
  2. Stir in taco seasoning and add water according to the package directions, mixing until the beef looks evenly coated.
  3. Simmer the beef until thickened, about 5 minutes, so it clings well to the chips.
Build in individual chip bags
  1. Cut open individual bags of corn chips down one side so they can be filled without spilling.
  2. Spoon the seasoned beef directly into each bag, aiming for a heaping layer on the bottom.
  3. Top each bag with shredded cheddar cheese, then add shredded lettuce and diced tomatoes for a fresh crunch.
  4. Finish each bag with sour cream and salsa, keeping toppings layered rather than stirred.
  5. Serve immediately by handing out forks with the bags, then eat straight from the packaging.

Notes

Set up a topping bar so everyone can build their own bags, and crush the chips slightly before adding toppings for easier eating. Store assembled ingredients separately: keep beef in the fridge up to 3 days, and refrigerate toppings (covered) 2-3 days; assemble just before serving for best crunch. Freezing: freeze the seasoned beef up to 2 months, thaw in the fridge overnight, then reheat until hot before filling. For a lighter option, swap sour cream for plain Greek yogurt.
