Prep
- Preheat the oven to 350°F and grease a loaf pan until evenly coated, then set it aside.
Mix the wet ingredients
- Whisk the mashed bananas, shredded zucchini, eggs, vegetable oil, and sugar together until smooth and glossy, with no dry banana streaks visible.
Mix the dry ingredients
- Whisk the all-purpose flour, baking soda, and salt together until the baking soda and salt are evenly distributed.
Combine
- Fold the dry ingredients into the wet mixture until just combined, stopping as soon as you don’t see pockets of dry flour.
Bake
- Pour the batter into the prepared pan, filling evenly and smoothing the top for a level bake.
- Bake at 350°F for 50-55 minutes, until a toothpick inserted in the center comes out clean with only a few moist crumbs.
Cool and serve
- Cool the loaf in the pan for 10 minutes, then turn it out onto a wire rack so the bottom stays set and not soggy.
Notes
Use very ripe, spotty bananas for the best natural sweetness and moisture, and squeeze the shredded zucchini dry so the loaf holds together well. Wrap tightly and store at room temperature for up to 4 days; freeze for up to 2 months if you want to keep it longer. For a lighter option, replace half the vegetable oil with unsweetened applesauce while keeping the loaf’s structure in place.
