Ingredients

Butternut squash
  • 2 cup cubed butternut squash
Olive oil
  • 2 tbsp olive oil
Onion
  • 1 yellow onion, diced
Garlic
  • 3 clove garlic cloves, minced
Arborio rice
  • 1.5 cup Arborio rice
Chicken broth
  • 4 cup warm chicken broth Use warm broth for even cooking.
White wine
  • 0.5 cup white wine
Dried sage
  • 1 tsp dried sage
Parmesan cheese
  • 0.75 cup grated Parmesan
Butter
  • 2 tbsp butter

Equipment

  • 1 Dutch oven

Method

Roast the squash
  1. Heat the oven to 400°F and roast the cubed butternut squash tossed with olive oil for 20 minutes, until lightly golden at the edges (visual cue: pieces look softened and browned).
Build the risotto base
  1. In an oven-safe Dutch oven, sauté the diced yellow onion and minced garlic until softened and fragrant (about 3–4 minutes), then toast the Arborio rice in the same pot (visual cue: rice grains look slightly opaque).
  2. Add the white wine, stir to combine for 30 seconds, then add the warm chicken broth and dried sage.
  3. Cover the Dutch oven and bake at 375°F for 30 minutes, keeping the top covered so steam cooks the rice evenly (visual cue: liquid is absorbed and the rice looks creamy).
Finish and serve
  1. Stir in the roasted squash, grated Parmesan, and butter until melted and glossy (visual cue: the risotto looks thick and creamy, not dry).
  2. Rest the risotto for 5 minutes before serving to thicken slightly and settle the texture (visual cue: it becomes spoonable and cohesive).

Notes

Pro tip: warm chicken broth helps the rice cook evenly in the oven without stirring. Store leftovers in the fridge up to 3 days in an airtight container; reheat gently with a splash of broth or water. Freezing is not recommended for the creamiest texture. For a dairy swap, use lactose-free butter and lactose-free Parmesan (or a Parmesan-style lactose-free alternative) to keep the flavor while reducing lactose.
