Bananas
  • 3 3 ripe bananas, sliced into rounds
Peanut butter
  • 0.5 cup 1/2 cup peanut butter
Chocolate coating
  • 1.5 cup 1 1/2 cups chocolate chips
  • 1 tbsp 1 tbsp coconut oil
Optional topping
  • 1 Sea salt, for sprinkling (optional) Optional; use sparingly to avoid overpowering the chocolate.

Method
 

Assemble the banana sandwiches
  1. Spread a small amount of peanut butter onto half the banana slices, then top with the remaining slices to form sandwiches. Press gently so the layers stay together during freezing.
First freeze
  1. Place the banana sandwiches on a parchment-lined tray and freeze for 30 minutes, until firm. The filling should be set enough that it won’t ooze when dipped.
Melt the chocolate
  1. Melt the chocolate chips with coconut oil in the microwave in short bursts, stirring between each. Stop when smooth and glossy with no visible lumps.
Dip and coat
  1. Dip each frozen banana sandwich into the melted chocolate, coating fully. Let excess chocolate drip back to the tray for an even shell.
Finish and set
  1. Return to the tray and sprinkle with sea salt if using. Add the salt quickly before the chocolate firms up.
Final freeze
  1. Freeze for another 30 minutes, until the chocolate is set. The bites should feel firm to the touch with a clean chocolate snap.

Notes

Pro tip: freeze the banana sandwiches before dipping so the peanut butter stays in place and the chocolate shell doesn’t get messy. Store in an airtight container in the freezer for up to 2 weeks; freezer yes. If you want a dairy-free option, use dairy-free chocolate chips to keep the same method and texture.
