Ingredients

olive oil
  • 2 tbsp olive oil
yellow onion
  • 1 yellow onion diced
garlic cloves
  • 3 garlic cloves minced
dried rosemary
  • 1 tsp dried rosemary
chickpeas
  • 2 can (15 oz) chickpeas drained
diced tomatoes
  • 1 can (14 oz) diced tomatoes
vegetable broth
  • 4 cup vegetable broth
kale
  • 4 cup kale chopped
heavy cream
  • 0.5 cup heavy cream
Parmesan
  • 0.25 cup Parmesan grated
salt
  • 0.25 tsp salt to taste
black pepper
  • 0.25 tsp black pepper to taste

Equipment

  • 1 Dutch oven

Method

Sauté the aromatics
  1. Heat the olive oil in a Dutch oven over medium heat for 1 minute, then sauté the diced yellow onion for 5 minutes until softened and slightly translucent, stirring occasionally. Add the minced garlic and dried rosemary and cook for 1 minute until fragrant.
Simmer the soup
  1. Add the drained chickpeas, diced tomatoes, and vegetable broth to the pot, then simmer for 15 minutes over medium heat, stirring once or twice to prevent sticking. Keep the surface gently bubbling.
  2. Mash about a third of the chickpeas directly against the pot with a spoon or potato masher to thicken the broth. Continue simmering for 2 minutes to let the texture settle.
Cook the kale
  1. Stir in the chopped kale and cook for 5 minutes until tender and bright green. Taste and adjust seasoning readiness before adding the dairy.
Finish creamy
  1. Reduce heat to low, then stir in the heavy cream and grated Parmesan until melted and smooth. Season with salt and black pepper to taste, then cook for 2 minutes on low without boiling.

Notes

Mash about a third of the chickpeas for a naturally creamy body without thinning the tomato broth. Store leftovers in the refrigerator up to 3 days; rewarm gently on the stove over low heat, adding a splash of broth if needed. Freezing is not recommended due to the cream, but you can make it without the cream and Parmesan, freeze, and then add them after reheating.
